Watermelon, Feta and Pistachio Salad

One of the best things about late summer is the perfectly ripe watermelon.  This salad is perfect for a lazy afternoon soaking up the last of summer's sun and enjoying a crisp white wine with it.  Don't forget some nice crusty bread to soak up all the leftover juices, thats the best bit!


  • 1/2 small watermelon, chilled
  • 3/4 cup of crumbled feta cheese
  • A handful of shelled and coarsely chopped pistachios
  • 2-3 tbsp EVOO
  • Salt and Pepper to taste


Cut your watermelon into about 1/4 inch thick slices and lay they on a plate, add a layer of feta, EVOO, S&P and pistachios.  

Continue to layer the watermelon with the other ingredients until you run out.
